  1.                                 Applesauce Cake

  3.          Cream together 2 cups sugar and 1 cup butter. Add 1&1/2
  4.          cups applesauce, 1 tablespoon soda dissolved in hot
  5.          water, 1 tablespoon each cinnamon and vanilla, 3 cups
  6.          flour, 1 cup raisins and 1/2 cup nutmeats. Bake in a
  7.          loaf cake tin.

  10.                                 Cottage Cheese Cake

  12.          Mix together well 1 pint sweet milk, 1 cake compressed
  13.          yeast and stir this into 2 quarts sifted flour. Mix
  14.          well and set in a warm place to rise. When light add
  15.          1/4 cup butter, 1 cup sugar, 1 teaspoon salt and let
  16.          stand 2 hours. Then work this down and let rise 1&1/2
  17.          hours. Put in a buttered pan, spread butter on top and
  18.          let rise 20 minutes. Then cover with cheese misture
  19.          which is made as follows: In 1 pound cottage cheese mix
  20.          2 beaten egg yolks, 2 tablespoons corn starch, sugar to
  21.          taste, grated rind of 1 lemon, 2 teaspoons vanilla.
  22.          Spread this on to of the cake and bake 30 minutes in a
  23.          quick oven. Cinnamon can be used for flavoring if
  24.          desired, placing it on top of the cheese.

  27.                                 Jam Cake

  29.          Cream together 1&1/2 cups sugar and 1 cup butter. Add 2
  30.          well beaten eggs, 1 teaspoon each of cinnamon, allspice
  31.          and cloves, 1&1/2 teaspoons soda dissolved in 14
  32.          tablespoons of sour milk. Use any kind of fruit jam and
  33.          enough cake flour to make a proper dough, usually about
  34.          2 cups. Bake in a loaf tin.

  37.                                 Sausage Cake

  39.          To 1 pound sausage add 2 cups sugar, 1 cup raisins, 1
  40.          cup warm coffee, 1 teaspoon each ground cloves,
  41.          cinnamon, allspice, nutmeg, 3/4 cup chopped nutmeats, 1
  42.          teaspoon soda sifted in 2&1/2 cups flour. Bake in slow
  43.          oven.

  46.                                 Pork Fruit Cake

  48.          The following is an excellent recipe: 1/2 cup butter,
  49.          3/4 cup brown sugar, 3/4 cup seeded raisins, 3/4 cup
  50.          English currants, 1/2 cup citron cut in thin bits, 1/2
  51.          cup molasses, 2 eggs, 1 cup chopped fat fresh pork, 1/2
  52.          cup sour milk, 2 cups flour, 1/2 teaspoon soda, 1
  53.          teaspoon cinnamon, 1/2 of allspice , mace, cloves, and
  54.          lemon extract, 1 cup chopped figs. A few rich preserves
  55.          add to the cake, Cream the butter well and add the sugar
  56.          gradually, beating constantly, Then add yolks of eggs
  57.          well beaten. Next add all the liquids and follow with
  58.          the flour. The flour should be well sifted with the soda
  59.          and spices sifted added. Beat the mixture thoroughly to
  60.          secure a fine grain and then add the well beaten egg
  61.          withes. Then fold in the fruits, this prevents the fruit
  62.          from going to the bottom of the batter. Bake in 2 small
  63.          loaves in a slow oven.
